Impress your friends and family with this deliciously refreshing gin-based cocktail recipe from the team at Colwith Farm Distillery.

If you are looking for a cool and zesty summer cocktail, then try this simple twist on a classic - an Aval Dor Gin Mojito.

The fresh lime and mint pair beautifully with Aval Dor Dry Gin - served over plenty of ice, it’s great for one, or why not make a pitcher to share?

Here’s how:

30ml fresh lime juice 6 x lemon balm leaves

30ml sugar syrup

50ml Aval Dor Dry Gin

Soda to taste

Method:

Add the lime, lemon balm and sugar syrup to a highball glass, and muddle for 10 seconds.

Add enough crushed ice to reach the top of the glass, then pour in the gin and stir. Top with soda, and garnish with a lemon balm sprig.

Better still, let Colwith Farm Distillery make one for you! Sit back and relax on their sun terrace, enjoying the countryside views as the sun slowly sinks in the summer’s sky.

Colwith Farm Distillery (near Lanlivery) is one of only a handful of distilleries in the country that make gin and vodka from scratch on one single estate. Founded on five generations of farming history, they craft their spirits from the potatoes from Colwith Farm that are too small or wonky for commercial use. The distillery is powered completely by renewable energy and the team are working towards zero waste, spreading all production stillage back on the fields to irrigate the land.

Their Aval Dor (Cornish for potato) Vodka is proudly now the best performing British vodka, having recently won platinum at the prestigious San Francisco World Spirits Competition.

Come and visit for yourself - tour the working distillery, sample their award-winning spirits, or even better, come and learn to make your very own bespoke gin or flavoured vodka to take home!
